Nebbiolo is rightly considered the most important variety of the region: Roero alongwith Barolo and Barbaresco is the selected area for this variety in the south of Piedmont. Pedo-climatic conditions determine very elegant and perfumed wines without dropping the typical structure and power of Barolo.

This variety is characterized by a high vegetative vigour, able to accumulate very high quantities of sugar in its berries; unfortunately it cannot synthesize big quantities of antocyanins which are responsible for the colour, that’s why it’s so important to preserve at most the fruits of nature. Perfumes are really inspiring: a large range of sensations suggesting fruits of the forest, particularly strawberries and blackberries, up to scents of soft fruits jam and hay in case of cask-aged wines.

Every kind of Nebbiolo goes well with every dish, starting from meat appetizers when it’s young up to the most refined game and cheeses as well since they represent another tasty and varied expression of this land.
